Breads

Apricot-Ginger

This fruit bread begins with a starter of unbleached white flour. We then add unbleached white flour, plumped sundried apricots, preserved ginger, organic Brittany sea salt, and yeast.

Baguette

Our baguette is a simple, organic version of the traditional crusty French bread. It is made with 100% unbleached white flour, using a starter of the same, with only organic Brittany sea salt, water, and yeast added.

Ciabatta

Our Ciabatta is a traditional Italian bread made from a wet dough which produces a chewy crust and moderate size bubbles in the loaf. It is made with 100% unbleached white flour, using a starter of the same, with organic Brittany sea salt, and yeast. We also add roasted garlic and garden fresh rosemary for an extra taste sensation.

Medjool Date & Raisin

This fruit bread begins with a starter of unbleached white flour. We then add unbleached white flour, plumped organic raisins, fresh organic medjool dates, cinnamon, organic Brittany sea salt, and yeast. The natural sugars of the fruit give this loaf a beautiful dark crust.

Honey Sunflower

This multigrain begins with a Red Fife whole wheat starter, and a mix of 50% unbleached white flour, 50% Red Fife whole wheat flour, organic Brittany sea salt, and yeast. The mixture of organic seeds and grains includes: flax seeds, sunflower seeds, pumpkin seeds, rolled oats, sesame seeds, buckwheat groats, millet, cornmeal, and local organic fir honey.

Kalamata Olive & Rosemary

This delicious savoury loaf is made the same as our Pagnotta, but with pitted Kalamata olives and garden fresh rosemary added.

Pagnotta

Our Pagnotta is a traditional white crusty Italian bread. It is made with 100% unbleached white flour, using a starter of the same, with only organic Brittany sea salt, water, and yeast added.

Panini

Our Paninis are made with the Pagnotta dough, and are filled with either Callebaut dark chocolate, or a savoury mix of sun-dried tomatoes, feta cheese, and garden fresh rosemary.

Rye

Our rye bread begins with a whole dark rye sour dough starter, and a mix of 50% whole dark rye flour, 50% unbleached white flour, organic Brittany sea salt, yeast and a touch of local organic fir honey.

Scones

Our scones start with unbleached white flour, butter, local eggs, cream, orange juice, organic unrefined cane sugar, baking powder, and organic Brittany sea salt. We then add a variety of delicious extras depending on the type of scone.

Spelt Multigrain

This multigrain begins with a whole spelt starter, and a mix of whole spelt flour, dark rye flour, unbleached white flour, organic Brittany sea salt, and yeast. The mixture of organic seeds and grains includes: flax seeds, sunflower seeds, pumpkin seeds, rolled oats, sesame seeds, buckwheat groats, millet, cornmeal, and local organic fir honey.

100% Spelt Pecan Plum

This delicious bread begins with a whole spelt starter, with only the whole spelt flour added, then organic Brittany sea salt, and yeast. We add dried plums soaked in water and pecan halves toasted in the wood-fired oven. This loaf has a wonderful texture and flavor, and is very versatile.

Granola

Our Granola is a delicous mix of organic rolled oats, organic sunflower seeds, organic pumpkin seeds, chopped almonds, organic cane sugar, organic Brittany sea salt, organic spelt flour, vanilla, expeller pressed canola oil, and local fir honey. The granola is roasted in our wood fired oven to give it a unique and unbeatable flavour.
